I was involved in the wetpaint beta a few months ago. One of the better hosted wikis with wywisyg editing. It doesn't work with Safari - just Firefox and IE - but is difficult to beat for someone looking for an easy-to-use low end solution.

I was on a conference with Campfire -- simple and it seemed to work well with about 20 other people.
